Meet Our Chef – Marc Sleeckx

Chef de Cuisine/Managing Partner Marc G. Sleeckx has had a love for wines for as long as he can remember. At an early age, Marc and his father would travel from one French vineyard to the next, taking in anything and everything wine related. These precious memories drove him to educate himself further in his knowledge and passion for wine.

At the age of twelve, Marc became a protégée of Europe’s RSC Anderlecht. RSC Anderlecht was Belgium’s premier major league soccer team. Marc’s whirlwind of success came to an abrupt halt, at the early age of 19, when he suffered a career ending injury. Despite facing a difficult hurdle in his life, Marc switched his focus and decided to enter the hospitality industry.

Upon graduating from a top notch culinary school in Antwerp, Belgium, Marc partnered up with his former soccer teammate and started buying distressed lodging and dining properties turning them into profitable businesses. In 1983, Marc opened The Restaurant of the International Press of the European Parliament in Brussels, Belgium.

In 1986, Marc entered into a two year internship with the exclusive castle hotel, Schloss Liebnstein Hotel, in Germany. It was there that Marc had the opportunity to be trained under a one star Michelin Chef. At the end of his internship, Marc successfully graduated as a teacher of intern’s of culinary arts. Marc also had a six month stay with Enzo Ruggerie, Europe’s premier Matre’d and Sommelier of Bugatis Restaurant in Stuttgart, one of Europe’s premier Northern Italian Cuisine restaurants, to further master his wine techniques and tableside service. In 1989 Marc started working for Marriot Hotels as the Food and Beverage Director and later as Hotel Director.

Marc got married in 1992 and started a hospitality consulting company. Marc’s premier assignments involved directing Zelda’s Restaurant at the Don Caesar and the Ana Maria Restaurant in St Petersburg, Fl. He had a two year contract with Georgia’s premier country club, The Bent Tree, as a food and beverage director. He also managed several restaurants, catered numerous events and orchestrated several weddings. Marc also directed events for AT&T and held events for dignitaries for diplomats, international dignitaries and celebrities. During the Olympics, Marc was chosen as one of the “Top 13 Outstanding Chefs” in the state of Georgia by American Express.

Marc has personally cooked for the former president of Germany, Walter Scheel Honaker, the Ambassadors of Kenya, Poland, Russia and China and celebrities such as Ryan Klesko, Javier Lopes Chipper Jones, Brian Jordan, etc. He has also built vineyards in Heilbronn, Germany.

Marc, his wife and their son currently reside in Crawford County.  Lisa runs their horse ranch and stable, All Hoofed Up, which is less than 20 minutes from the HideAway Inn.
